Banana Coffee Chocolate Muffins

A lot of my friends, when faced with the problem of ripe bananas, often resort to making Banana bread. I, however, am not a big fan of it. So, I experimented a bit by combining my love for bananas, chocolate and coffee. Et Voilà – Banana Coffee Chocolate Muffins. 

INGREDIENTS: 

– 2 ripe bananas 
– 200 gms. all purpose flour (or Dinkelmehl)
– 75 gms. chocochips (dark chocolate)

– 100 gms. butter 
– 120 gms. of sugar  

– 150 ml. milk
– 4 tsp. instant coffee 
– 2 eggs
– 1 packet vanilla sugar (approx. 2 tsp.)
– 2 tsp. baking powder
– a pinch of salt 

Makes: 15-16 muffins


METHOD: 

Mash the bananas with a fork and add a packet of vanilla sugar to it. Set it aside. 

Whip the sugar and the eggs till the mixture becomes thick and foamy. Then add the sifted flour, baking powder, salt, butter and coffee to it. Mix well. 

Then add the mashed bananas and chocochips to this mixture.

Add the batter to the muffin forms. 

Bake for 20-25 mins at 180 degrees. As a test, insert a tooth pick and see if it comes out clean. 

Once done, let the muffins cool down before serving. 


NOTE: 
A little more sugar can be added according to taste since the flavor of the coffee can be a little overwhelming.
